01 Harvest
Harvested at peak freshness, from our family groves.
Our Koroneiki olives are hand harvested at the peak of ripeness when the fruit is full of life and naturally rich in polyphenols, antioxidants, and healthy monounsaturated fats.
Time is essential. After harvest, the olives are carefully transported to the mill within hours.
Any delays can lead to oxidation and fermentation, which negatively impact the oil's quality, increase acidity, and diminish aroma and nutritional value.
That is why we act fast – to preserve everything nature intended.
02 Production
Cold extracted to preserve what matters most.
Once at the mill, the olives are cleaned and crushed using low temperatures in a controlled environment.
We use a cold extraction method, keeping the temperature below 27°C (80.6°F) throughout the entire process. This protects the natural antioxidants, vitamins, delicate aromas, and the oil's fresh, authentic flavor.
The paste is slowly malaxed, then centrifuged to separate the oil from water and solids – without chemicals, without shortcuts.
The result is a vibrant, balanced extra virgin olive oil with low acidity, rich taste, and exceptional nutritional value.
03 Packaging
Protected from bottle to table.
Lydelia olive oil is carefully stored in white opaque glass bottles to ensure complete protection from light and oxygen. This preserves its exceptional nutritional properties from the moment it is bottled to the moment it enhances your most cherished dishes.
