Tzatziki

Appetizers/Dips & Spreads

INGREDIENTS:

  • 500 gr Greek yogurt 2%

  • 1 cucumber

  • 1 carrot finely grated

  • 1-2 garlic cloves

  • 2 tbsp red wine vinegar

  • 3 tbsp Lydelia evoo

  • Salt & Pepper to taste

Directions

  1. Prepare the cucumber and carrot

    • Peel the cucumber (optional if you like extra texture).

    • Grate it with a box grater.

    • Place the grated cucumber in a clean kitchen towel or cheesecloth, sprinkle lightly with salt, and squeeze out as much liquid as possible. (This step prevents watery tzatziki.)

    • Grate the carrot

  2. Combine the base

    • In a mixing bowl, add the Greek yogurt, garlic, olive oil, and vinegar. Mix well until smooth.

  3. Add the cucumber

    • Stir in the squeezed cucumber

  4. Season

    • Add salt to taste and a pinch of black pepper if you like.

  5. Chill

    • Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.

  6. Serve

    • Drizzle with a little extra olive oil and garnish with a sprig of dill or a few cucumber slices

    • Serve with warm pita, fresh bread, grilled meats, or as part of a meze spread.
