To Cake Tis Mamas - Mom's Marble Cake

Ingredients

1 ½ cups sugar

4 eggs

1 cup extra virgin olive oil

1/2 cup milk

1/2 cup fresh orange juice

1 tsp orange zest

3 Tbsp cognac (optional but recommended)

1 tsp vanilla extract or vanilla powder

2 ½ cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

For the Marble Swirl

4 Tbsp cocoa powder

1–2 Tbsp icing sugar (powdered sugar)

2 tbsp milk

Instructions

1. Preheat the oven

Set to 375°F (190°C).

Grease and lightly flour a cake pan or bundt pan.

2. Mix the base batter

In a large bowl, beat the sugar and eggs with a mixer until light and fluffy.

Slowly pour in the olive oil while mixing continuously.

Add the cognac, orange zest, vanilla, milk, and orange juice and mix to combine.

3. Combine dry ingredients

In a separate bowl, whisk together the flour, baking powder, and baking soda.

Gradually add the dry mixture into the wet mixture, mixing until smooth (do not overmix).

4. Create the chocolate swirl

Pour half of the batter into your prepared baking pan.

In another bowl, mix the cocoa powder with 1–2 Tbsp icing sugar and 2 tbsp milk.

Add this cocoa mixture to the remaining batter and stir until evenly combined.

5. Marble the cake

Pour the chocolate batter on top of the plain batter in the pan.

Use a spoon or knife to gently swirl the two layers together to create a marbled effect.

6. Bake

Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean.

7. Cool and serve

Allow the cake to cool before slicing.

Dust with icing sugar if desired.
